This is a great bread to have at dinner, with dipping sauces, toasted at breakfast with your favorite style egg dishes or as a sandwich bread.  this bread is very versatile and can be made with different herbs or with a little bit of fresh garlic blended into the mix.  I personally like to toast it and spread with coconut oil or avocado paste! 

  • 2 cups almond flour
  • 5 ounces Farmers Cheese (I prefer Friendship brand)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground course black pepper
  • 1/2 cup grated 24 months aged cheddar cheese
  • 3 eggs
  • 3 tablespoons melted butter (I prefer Kate’s Homemade Butter brand)

Topping

  • 1/2 teaspoon coarse ground sea salt
  • 2 tablespoons 24 months aged cheddar cheese
  • 1 teaspoon dried rosemary

Preheat oven to 375 degrees F.  Grease 9 by 12-inch baking dish.  Blend all ingredients together in a food processor until well blended. Remove mixture from food processor and spread evenly in greased baking dish.  Combine all topping ingredients mixing well.  Sprinkle on top of bread.  Place in oven and bake for 40 minutes or until golden brown.  Cool and thin cut into squares.

Yield: 12 to 16 squares
